Grandma’s Russian Cabbage Borscht
You can make this vegan, or not.
Ingredients:
Head of green cabbage
Veggie or chicken broth
Container of organic tomato juice
Can or box of organic tomato puree
One golden potato (though you can make this without)
One sweet or golden onion (though you can make this without)
A few cloves of garlic
Two lemons
Olive oil
Ground turkey or ground soy meat (optional)
Several tablespoons of any sweetener such as stevia, erythritol, monk fruit, or cane sugar
In a large pot:
Cut cabbage into slices does not need to be carefully diced
Saute’ in olive oil the bruised garlic cloves and diced onions till they are a tad browned. This is critical. One time I forgot to brown the onions and garlic and the soup did NOT come out as good.
Dice the potato and also saute’ it so the outside gets slightly roasted to keep in a bit of the flavor (but not essential to do this with the potato). Also important.
Browning is part of this soup’s secret sauce, ha.
Add tomato juice and puree and broth
Start to heat
Add the juice of two lemons (depending on season and such you may need more than two it’s a sweet and sour flavor you are going for)
Add in sweetener may take up to several tablespoonfuls (sometimes I even add a few squirts of high sucrose-free ketchup)
Cover and cook at a medium boil for 1.5 hours
If adding any meat or meat substitute, after one hour, put in pieces of ground turkey or soy or whatever sources and then cover for another half hour
It is a whole meal.
Great with sourdough bread, boy I need to figure out how to make a great GF sourdough bread. (Does anyone have a good recipe?)
