There was a show called Bun Heads about East Coast Dancers that ended up in LA trying to make it!

One of them, the iconic funny almost Lucy Ball-esque star, was calling home.

Her NY friends inquired,

“How’s LA?”

She lamented,

“No one eats carbs anymore!”

Are carbs, like potatoes, true kryptonite?

To be avoided to stay lean and healthy?

What about the potato?

Let’s take a look at the food science, glycemic index, and what is called “resistant starch.

  • Let’s ask the question: Do potatoes make you fat?

  • Or are they redeemable?

This look-see into carbs and their ability to help keep us well or inadvertently keep us fat was looked at by some Oregonian researchers.
