Eating healthy and preparing food can be a short, nutritious, easy time, IF, you know your way around the kitchen.
I am hoping to get a kitchen somewhere to do a retreat to share knowledge, food, and laughter. Who wants to join in? Sometime next summer for sure.
For my meal, I used organic chicken thighs. Put them in a pan. Took a fork and put some holes in the meat (this lets the juice and flavor in).
Then, I added a bit of water, GF soy sauce, coconut aminos, and LOTS of herbs (parsley, garlic, cilantro, basil, etc.)
Finally, I covered the meat and liquid and let it cook a tad.
I remember speaking at the American Holistic Medical Association and Dr. Steve Sinatra opened the conference with a zinger.
Dr. Sinatra said:
“I am a cardiologist for the past 40 years.
For the first 30 years, I practiced like I had a paper bag over my head.
Many of my patients needed heart replacements or died. Surely many stayed tired and out of shape.
Then I discovered nutraceuticals. And herbs. Herbs are healing! Generously use herbs on your food.”
I never had to send a patient for a heart transplant again!
I use a lot of herbs. Not just a dash.
Halfway through cooking, I added diced dandelion greens, and purple kale (colors in plants are healing) - a lot! Covered it all again and cooked till done.
(I may have added some of the last Jordan red wine I had on hand, too.) A great cook is creative with what’s in the cupboards. This was delicious!
I even brought some to my dear Tracy, my hairdresser I have been going to for the past 18 years and she is now like family. Love making my friends, like family.
Love, love, love, to eat healthy most of the time. Do this so you can eat whatever you want some of the time. As long as you are not fighting for your life.

That looks delicious! I would love a cooking retreat as well! There is a place in the Santa Cruz mountains in CA called 1440 Multiversity that I keep looking at.
I can't wait to try this! I also look forward to hearing more about the cooking retreat!
